Skillet Lasagna

This was a super fast and super easy meal to make. Took a total of 25 minutes! Nice... :)

1 pound Jimmy Dean sausage
1 can diced tomatoes, slightly drained
4 cups spaghetti sauce
1 cup ricotta cheese
1 egg
1 package of no boil lasagna noodles
1 cup mozzarella cheese
1 tsp basil
1 tsp oregano
1 tsp diced garlic
dash of Italian seasoning

Brown sausage in a large skillet. Drain off grease. Add in garlic, basil and oregano.
After garlic has a chance to brown a little, add in 2 cups of spaghetti sauce. Mix well.

Pour diced tomatoes evenly over the sausage mixture.

Combine ricotta and egg in a small bowl and mix well.

Spread ricotta evenly over the tomatoes.

Top the ricotta with a layer of lasagna noodles (I broke them up if needed to fit around the skillet).

Add two more cups of sauce over the noodles.

Top again with the remaining lasagna noodles.

Bring to a boil. Reduce heat to medium-low and cover. Cook for 10-15 minutes or until noodles are tender.

Sprinkle with mozzarella cheese and a dash of Italian seasoning. Cook, covered, for 2 more minutes. Serve immediately!
