Brian's dad makes crepes for every holiday brunch gathering. Brian was craving them the other day and this is the recipe we got...
1 C pancake mix (there is an actual crepe mix out there...but this is basically the same thing!)
1 - 1 1/2 C water
1 T butter
1 egg
Combine ingredients in bowl. The batter should be really thin. Add water as needed. Pour small amount of batter in hot pan, roll the pan around to get the batter to cover the entire bottom. Let cook for a couple of minutes and then flip it over. Cooks on second side for only a few seconds.
Fill with berries, bananas, whip cream, powdered sugar, Nutella, etc. Be creative!
