We tried this recipe out tonight and I was impressed. I added and took away from the original recipe, but it turned out to be really good! This is my version...
1 chicken breast
6 potatoes, peeled and cubed
1/2 onion (recipe actually calls for 2 whole, but we don't do the onion thing...1/2 was pushing it!)
2 leaks, chopped
1 carrot, peeled and chopped
2 ribs celery, chopped
1/2 lb - 1 lb bacon, cooked and crumbled (I used 12 slices of the precooked kind...microwaved...BRILLIANT!)
4 chicken bullion cubes
1 T salt
1 T parsley
pepper to taste
1/3 C butter (I might use less next time...)
5 C water
1 12 oz can evaporated milk
chopped chives
Combine all ingredients except milk and chives in slow cooker. Cover. Cook on high 3-4 hours. Stir in milk during the last hour. Garnish with chives.
