'Cupcake' Tacos

3 chicken breasts, diced OR
1 pound ground turkey/beef
1 packet of taco seasoning
1 can refried beans
1 box Mexican or Spanish style rice (Rice A Roni)
3 tomatoes
shredded lettuce
shredded cheddar cheese
guacamole
sour cream
4 burrito size tortillas

Heat oven to 350.

Cook chicken/turkey/beef and follow the directions on taco packet.

Cook rice according to directions on box.

Cut three oval type shapes out of each tortilla, using as much of the tortilla as possible. Using a cupcake pan, fold each oval into the 12 holes. Spread a thin layer of refried beans over the tortillas, going well up the sides. Using an ice cream scooper, scoop a spoon of chicken and a spoon of rice into the cups. Sprinkle the cheese on top.

Bake for 15-20 minutes, until cheese is melted and tortilla is crisp.

Add tomatoes, lettuce, guacamole and sour cream to the top.
